Facing Heaven chilli or Chao Tian Jiao is one of my favourite chillies of all time, then name comes from the way the chillies grow on the plant..Upright facing heaven

 

We have been growing them for years as we couldn’t find them anywhere else it’s a great rarity from China.

 

However now that China has opened its doors we can supply the genuine chilli full of China Flavour from the Szechuan region

 

It is a medium hot chilli with citrus flavours and is the most distinctive and useful chilli grown in China. A must for stir fries and sauces. Superb!

Jinta Chilli

 

Very similar to their cousin, the Guajillo chilli, but more potent with a more intense fruity flavour

 

Great in Salsas, or other dishes where a good kick of flavoursome chilli is needed

 

Jinta skin is quite leathery when dry and requires a longer than normal soaking

 

Used as a rub, marinade, or just as an ingredient with the cooking pot, the flavour is strong while the heat is low at around 5000 SHU

A must for all Chilli Heads and Cooks alike

Xian Horn Chilli

 

(Pronounced See Ann)

 

This is related to the Chilli used in Most Chinese Take Aways etc

 

However this strain has been developed to enhance its flavour and size

 

Although regional variations occur, this is a Cayenne Type Chilli

 

Unlike their Indian Cousins though, this chilli is slightly sweeter and milder in heat

 

Its flavour is all China and will compliment any dish you are cooking

 

The pods are very long (hence the horn name) and wrinkled and are great finely chopped up in your meal

 

Typically 1 Chilli Pod weighs between 0.5g and 1g and about the length of a medium hand

Long Facing Heaven Chilli

 

One of the most famous Chinese Chillies in the World

However, there seems to be some confusion about what they exactly are

In China these chillies are called "Zhi Tian Jiao" Jiao means Pepper and La Jiao means Chilli or Spice Pepper

This name may have a variations such as Chao Tian Jiao which means Chilli from Chaotian a region of Sichuan

Typically Facing Heaven refers to a small red chilli from China and means grows upwards to touch the sky

These chillies have a mild heat with a citrus overtones which makes it great in any Chinese dish, let alone Chilli and Lime Spare Ribs!!!

Longji Lajiao aka Dragons Back Chilli

 

The Dragon’s back is one of the great man made features of China.

 

It consists of terraces cut into the mountain sides over 700 years ago to grow mainly rice. Located along the Li River near Guilin the Dragon’s back curves majestically around the contours of the mountains like the scales on a dragon’s back.

 

 Hand picked, sun dried in the beautiful Dragon's back area of Guizhou, medium heat and full of flavour.

 

It is said that the best homemade chilli sauce in China is made by the local people who grow these chillies alongside the terraced rice paddy fields which gives this area one of the man made wonders of China.

Hunan White aka Chinese White Chilli

The name in China is Hunan White Chilli, which is 湖南白辣椒 HuNan Bai (white) lajiao (chilli), copy paste 湖南白辣椒 into google images

You will see a whole range of great looking meals using these chillies

Cayenne in type, but being cultivated in China the flavour and aroma is pure China

Very distinctive aroma - a mix of cayenne and fruit, mild in heat values

The chillies are not dried in the modern way but very traditional of picking the pods while still green, dipped in a salty water solution and left to dry in the sun. This process makes the chilli extremely soft in texture and you can still see the salt deposits on the stem

I tried this chilli for the first time with a smoked gammon steak and a warm salsa of shallots toms and sweet pepper, the flavour came through all and added a wonderful flavour to a classic dish, back drop of heat and a lasting taste that was very pleasant in deed

Highly recommend these chillies for any chilli head, but if you are into chinese cooking then you cant go wrong with an authentic chilli from China

Typically a 10g pack contains approx 9 whole pods with at least a year best before date. The pods are whole and include the seeds, however due to the drying process the seeds are sterilised and it is very doubtful a seed will germinate

Red River Golden Daggers Chilli

The chilli world is starting to explode with new trade routes and new chillies being found, normally grown for hundreds of years but never known outside the areas where the chilli plant developed

 

This is without exception, originally it grew in the fissures in the rocky ground around Knife village, Shiping County, Yunnan Province in the far South West of China

 

As with all chillies that have been grown by generations the flavour is sublime with a nice kick of spice, mild heat – a lot more heat than I was expecting when trying it, estimate around 70K -100K SHU

 

Makes a good cuppa – hot water and a few pods and allow to brew for a minute

 

Now this chilli is grown commercially in neighbouring Honghe county in areas with similar climatic and geological conditions, the annual crop has increased but still less than 50 tonnes of dried chillies are produced annually

 

Each pod weighs approx 0.3g-0.5g and is approx 2cm in length

Thunder Mountain aka Guizhou Longhorn 50g

Grown in the area of Guizhou in China in a region called Thunder Mountain

 

The locals celebrate the bull and the Longhorns have been developed to emulate the bulls horns

 

The harvest in the last year or two has been sublime and our supplier has selected some of the longest chillies we have ever seen 40-50cm!

 

They have been dried in a charcoal method which incorporates sun drying and adding a slight smoky flavour to the pod

 

Low - Mild in heat – makes great sweet Thai sauce
