Ranging in heat levels from low to hot, the Amarillo is a medium heat chilli that when rehydrated in cooking bursts with fruity flavour and a good kick of heat - around 75000 SHU

 

Used as a rub, marinade, or just as an ingredient with the cooking pot

Aji Panca Chilli

 

Originated in Peru, and as with all Aji types they are full of fruit flavour with the Panca Type being mild

 

Heat levels are around 25000 SHU so a week cayenne heat, but full of Peruvian Magic of fruity and smokey overtones

 

Used as a rub, marinade, or just as an ingredient with the cooking pot

Personally we make a paste of these chillies with a little oil in the blender and then add roasting game meat and birds - perfect!
